You can't delete the default "Internal Provider" but can edit the name according to your preferences.
How can I differentiate between a category and a subcategory in the category section?
By hovering near the created categories name, an "eye" icon can be found beside a category name, which means that the main category contains a subcategory. Also by clicking on the "eye" icon the name of the subcategory can be found.
